Cucumber Edamame Salad

A refreshing and easy-to-make salad perfect for summer.

Ingredients

  • 1 cup edamame, shelled
  • 1 large cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine edamame, cucumber, red onion, and cilantro.
  2. In a small bowl, whisk together olive oil, rice vinegar, sesame oil, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • This salad can be made a day in advance for better flavor.
  • Feel free to add other vegetables like bell peppers or carrots.
