- 1 cup quinoa
- 2 cups water
- 1 onion, finely chopped
- 2 carrots, grated
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup fresh parsley, chopped
- Salt to taste
- Pepper to taste
- Oil for frying
- Rinse the quinoa under cold water and drain.
- In a pot, combine quinoa and water; bring to a boil, then cover and simmer for 15 minutes or until water is absorbed.
- In a pan, sauté onion, carrots, bell pepper, and garlic until soft.
- In a large bowl, combine cooked quinoa, sautéed vegetables, cumin, paprika, breadcrumbs, egg, parsley, salt, and pepper.
- Form the mixture into patties.
- Heat oil in a pan over medium heat and cook patties for 4-5 minutes on each side until golden brown.
- Serve warm with your favorite dipping sauce.
