Delicious Crunchy Quinoa Veggie Patties for Ultimate Comfort

These delicious crunchy quinoa veggie patties are the ultimate comfort food, perfect for enjoying at home.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 onion, finely chopped
  • 2 carrots, grated
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup fresh parsley, chopped
  • Salt to taste
  • Pepper to taste
  • Oil for frying

Instructions

  1. Rinse the quinoa under cold water and drain.
  2. In a pot, combine quinoa and water; bring to a boil, then cover and simmer for 15 minutes or until water is absorbed.
  3. In a pan, sauté onion, carrots, bell pepper, and garlic until soft.
  4. In a large bowl, combine cooked quinoa, sautéed vegetables, cumin, paprika, breadcrumbs, egg, parsley, salt, and pepper.
  5. Form the mixture into patties.
  6. Heat oil in a pan over medium heat and cook patties for 4-5 minutes on each side until golden brown.
  7. Serve warm with your favorite dipping sauce.

Notes

  • You can substitute the egg with a flax egg for a vegan version.
  • These patties can be baked instead of fried for a healthier option.
