  • 1 cup salsa verde
  • 1 cup cooked rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, salsa verde, cooked rice, black beans, corn, half of the cheese, cumin, garlic powder, salt, and black pepper. Stir well to combine.
  3. Transfer the mixture to a greased baking dish and spread it evenly.
  4. Top with the remaining cheese.
  5. Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly.
