Dense Bean Salad Sun Dried Tomato Version

A flavorful and nutritious bean salad featuring the savory taste of sun-dried tomatoes.

Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the black beans, kidney beans, cherry tomatoes, sun-dried tomatoes, red onion, and parsley.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, garlic powder, salt, and pepper.
