  • 1 cup fresh cranberries, chopped
  • 1 tablespoon orange zest
  • 3/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup orange juice
  • 2 large eggs

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the dry ingredients: flour, sugar, baking powder, and salt.
  3. In another bowl, mix together the wet ingredients: melted butter, orange juice, and eggs.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the cranberries and orange zest.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.

Notes

  • For a sweeter muffin, increase the sugar to 1 cup.
