Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onions and garlic, sautéing until soft.
  2. Stir in the chopped zucchini and cook for about 5 minutes.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.
