Easy Ground Beef Enchiladas

This dish is the perfect combination of flavors and comfort, made with ground beef, cheese, and homemade enchilada sauce.

  • 1 pound ground beef
  • 2 cups shredded cheese
  • 1 cup enchilada sauce
  • 8 tortillas
  • 1 onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, cook the ground beef and onion over medium heat until beef is browned.
  3. Add garlic powder, chili powder, cumin, salt, and pepper. Mix well.
  4. Soften tortillas in the microwave or on a skillet.
  5. Spread a little enchilada sauce on the bottom of a baking dish.
  6. Fill each tortilla with the beef mixture and cheese, then roll them up and place them seam-side down in the dish.
  7. Pour remaining enchilada sauce over the top of the rolled tortillas.
  8. Sprinkle with extra cheese.
  9. Bake for 20-25 minutes until cheese is bubbly and golden.

Notes

  • For a spicier kick, add jalapeños to the beef mixture.
  • Top with sour cream and fresh cilantro before serving.
