Easy Italian Minestrone Winter Soup Recipe

A delicious and hearty Italian Minestrone soup perfect for winter nights.

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can (14 ounces) diced tomatoes
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 cup green beans, cut into pieces
  • 1 cup zucchini, diced
  • 1 cup pasta (small shape)
  • Salt and pepper to taste
  • ½ cup grated Parmesan cheese for serving

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; sauté for 5 minutes.
  3. Stir in garlic and cook for another 1 minute.
  4. Add vegetable broth, diced tomatoes, kidney beans, oregano, and basil.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Add green beans, zucchini, and pasta; cook until pasta is tender.
  7. Season with salt and pepper to taste.
  8. Serve hot with grated Parmesan cheese on top.
