Easy Low Carb Chicken Casserole

A delicious and simple low carb chicken casserole made with turkey bacon and fresh veggies.

Ingredients

  • 2 cups cooked, shredded chicken
  • 4 slices turkey bacon
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1/2 cup diced bell pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the chicken, cooked turkey bacon, broccoli, cauliflower, bell pepper, and half of the cheese.
  3. In another bowl, whisk together the cream, eggs, garlic powder, and onion powder.
  4. Pour the cream mixture over the chicken and vegetable mixture and stir well.
  5. Transfer the mixture to a greased baking dish and sprinkle the remaining cheese on top.
  6. Bake for 30-35 minutes, or until the casserole is bubbly and golden on top.

Notes

  • For added flavor, you can mix in your favorite herbs or spices.
  • Substitute vegetables based on your preference or what you have on hand.
