  • 1 cup pumpkin puree
  • 1/2 cup powdered sugar
  • 8 oz cream cheese
  • 1/4 cup butter

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a baking sheet with parchment paper.
  2. In a bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk eggs and sugar until fluffy. Add pumpkin puree and mix well.
  4. Gradually blend the dry ingredient mix into the pumpkin mixture.
  5. Spread the batter onto the prepared baking sheet and bake for 15 minutes.
  6. Once baked, roll the cake in the parchment paper and let it cool.
  7. Meanwhile, beat the powdered sugar, cream cheese, and butter until smooth.
  8. Unroll the cooled cake, spread the cream cheese mixture, and roll it back up.
  9. Chill for at least one hour before serving.
