  • 1 cup brown sugar
  • 1 cup vegetable oil

  • 1 can (15 ounces) pumpkin puree

  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the dry ingredients: flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  3. In another bowl, combine the granulated sugar, brown sugar, oil, eggs, pumpkin, and vanilla until smooth.
  4. Gradually add the dry mixture to the wet mixture until just combined.
  5. Pour the batter into greased cake pans and bake for 25-30 minutes.
  6. To make the frosting, beat the cream cheese and butter until creamy, then gradually add powdered sugar and vanilla until smooth.
  7. Once the cake is cooled, spread the cream cheese frosting evenly on top.
