- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 2 cups fresh strawberries, sliced
- ¼ cup powdered sugar
- Preheat the oven to 325°F (163°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of a cheesecake pan.
- In another bowl, beat cream cheese and granulated sugar until smooth. Mix in vanilla extract.
- In a separate bowl, whip heavy cream until soft peaks form. Gently fold into the cream cheese mixture.
- Pour the cream cheese mixture over the crust. Bake for 50 minutes, then turn off the oven and let the cheesecake cool inside for an hour.
- Refrigerate for at least 4 hours or overnight.
