  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 teaspoons eggnog extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup eggnog for filling

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, granulated sugar and brown sugar until smooth.
  3. Add eggs, vanilla extract, and eggnog extract; mix until combined.
  4. In another bowl, whisk together flour, baking soda, cream of tartar, salt, cinnamon, and nutmeg.
  5. Gradually add dry ingredients to the wet ingredients, mixing until just incorporated.
  6. Roll dough into 1-inch balls and place on a baking sheet.
  7. Make a small indentation in the center of each ball with your thumb.
  8. Bake for 10-12 minutes until the edges are golden.
  9. Allow to cool, then fill the indentations with eggnog.

Notes

  • These cookies can be decorated with additional cinnamon sugar for extra flavor.
  • Adjust the filling amount according to your preference.
