  • 2 large oranges
  • 1 cup pistachios, shelled
  • 1 cup almonds, ground
  • 1 cup sugar
  • 6 eggs
  • 1 teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Boil the oranges in a pot of water for about 2 hours until soft.
  3. Drain and cool the oranges, then chop them roughly.
  4. In a food processor, blend the chopped oranges with the pistachios, ground almonds, and sugar until smooth.
  5. Add the eggs and baking powder and blend again until combined.
  6. Pour the batter into a greased cake pan and smooth the top.
  7. Bake for 40-45 minutes or until a toothpick comes out clean.
  8. Allow to cool before serving.
