Fluffy Chocolate Chip Protein Pancakes (Without Banana!)

These fluffy chocolate chip protein pancakes are easy to make and don’t require any bananas!

Ingredients

  • 1 cup oat flour
  • 1 scoop protein powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk (or plant-based milk)
  • 1 tablespoon maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/3 cup chocolate chips

Instructions

  1. In a mixing bowl, combine oat flour, protein powder, baking powder, and salt.
  2. In another bowl, whisk together milk, maple syrup, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until combined.
  4. Fold in the chocolate chips.
  5. Preheat a non-stick skillet over medium heat and spray with cooking spray.
  6. Pour 1/4 cup of batter onto the skillet for each pancake.
  7. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.

Notes

  • Feel free to add your favorite toppings like fruit or whipped cream.
  • Store leftovers in an airtight container in the refrigerator.
