  • 4 pieces chicken thighs
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups potatoes, peeled and diced
  • 1/2 cup heavy cream
  • 4 tablespoons butter
  • 2 cups carrots, sliced
  • 2 tablespoons honey

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat and add garlic, thyme, rosemary, salt, and pepper.
  3. Add chicken thighs to the skillet and sear on both sides.
  4. Transfer chicken to a baking dish and bake for 25-30 minutes.
  5. Meanwhile, boil potatoes in salted water until tender.
  6. Drain potatoes and mash with heavy cream and butter.
  7. In another pan, sauté carrots in a bit of water, then drizzle with honey until glazed.
  8. Serve chicken with mashed potatoes and glazed carrots.
