  • ½ cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • ¼ cup unsalted butter, melted
  • 3 large eggs
  • 16 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • ½ cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. In a bowl, mix gluten free graham cracker crumbs, cocoa powder, sugar, and melted butter until combined. Press into the bottom of the springform pan.
  3. In a large bowl, beat the cream cheese until smooth. Add in the sugar and mix until creamy.
  4. Add in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Melt the chocolate chips in a microwave-safe bowl and let it cool slightly before folding it into the cream cheese mixture.
  6. Pour the cheesecake filling over the crust and smooth the top.
  7. Bake for 45-50 minutes, until the center is set. Remove from the oven and let it cool.
  8. Chill in the refrigerator for a minimum of 4 hours before serving.
