  • 1/4 cup honey or maple syrup
  • 2 eggs
  • 1 tsp baking powder
  • 1 tsp baking soda

  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup Greek yogurt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix pumpkin puree, eggs, and honey or maple syrup.
  3. Add the dry ingredients: almond flour, gluten free oats, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Fold in the Greek yogurt until well combined.
  5. Divide the batter into a lined muffin tin.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
