1 pound penne pasta
1 pound ground beef
1 cup enchilada sauce
1 cup shredded cheddar cheese
1/2 cup chopped onion
2 cloves garlic, minced
1 teaspoon cumin
1 teaspoon chili powder
Salt and pepper to taste
Instructions
Cook the penne pasta according to package instructions. Drain and set aside.
In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
Add chopped onion and garlic to the skillet and sauté until onions are translucent.
Stir in the enchilada sauce, cumin, chili powder, salt, and pepper. Simmer for 5 minutes.
Add cooked penne pasta and mix until well combined.
Transfer the pasta mixture to a baking dish and top with shredded cheddar cheese.
Bake in a preheated oven at 350°F (175°C) for 15-20 minutes or until the cheese is melted and bubbly.
Let it cool for a few minutes before serving.
Notes
For a spicier kick, add chopped jalapeños to the beef mixture.
