Gouda & Mushroom Stuffed Chicken

  • 4 chicken breasts
  • 1 cup Gouda cheese, shredded
  • 1 cup mushrooms, chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add garlic and mushrooms, cooking until tender.
  3. Stir in thyme and Gouda cheese until melted.
  4. Cut a pocket in each chicken breast and stuff with the Gouda and mushroom mixture.
  5. Season the outside of the chicken with salt and pepper.
