  • 1/2 cup breadcrumbs
  • 1/4 cup feta cheese, crumbled
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces orzo pasta
  • 2 cups chicken broth
  • 1 lemon, zested and juiced
  • 2 tablespoons olive oil
  • 2 tablespoons parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, feta cheese, egg, garlic, oregano, salt, and pepper. Mix until well combined.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. Bake for 20-25 minutes until cooked through and golden brown.
  5. Meanwhile, cook orzo in chicken broth according to package instructions.
  6. Once orzo is cooked, drain and stir in lemon zest, lemon juice, olive oil, and parsley.
  7. Serve the meatballs on a bed of lemon orzo.
