- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 4 cups vegetable broth
- 1 can diced tomatoes
- 2 cups spinach
- salt to taste
