Green Bean Bundles

A delicious side dish featuring green beans wrapped in turkey bacon.

  • 1 pound fresh green beans
  • 8 slices turkey bacon
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Trim the ends of the green beans and blanch them in boiling water for 3 minutes.
  3. Wrap a bundle of 5-6 green beans in a slice of turkey bacon and secure with a toothpick.
  4. Place the bundles on a baking sheet.
  5. In a small bowl, mix olive oil, garlic, salt, pepper, and lemon juice. Brush this mixture over the bacon bundles.
  6. Bake for 20-25 minutes or until the bacon is crispy.
  7. Serve warm.

Notes

  • For extra flavor, add a sprinkle of parmesan cheese before serving.
  • These bundles can be assembled ahead of time and stored in the refrigerator before baking.
