  • 2 cups shredded rotisserie chicken
  • 1 cup green enchilada sauce
  • 8 corn tortillas
  • 1 cup shredded cheese
  • 1/2 cup diced onions
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the shredded chicken, green enchilada sauce, onions, cumin, garlic powder, salt, and pepper.
  3. In a baking dish, spread a thin layer of enchilada sauce on the bottom.
  4. Soften the tortillas in a microwave, then fill each with the chicken mixture and roll them up.
  5. Place the rolled tortillas seam-side down in the baking dish.
  6. Pour the remaining enchilada sauce over the top and sprinkle with cheese.
  7. Bake for 20-25 minutes or until the cheese is bubbly.
