Ground Turkey Taco Casserole is a delicious and easy-to-make dish perfect for family dinner. This recipe combines all the savory flavors of tacos into a comforting casserole.

  • 1 pound ground turkey
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning
  • 2 cups cheese, shredded
  • 1 cup salsa
  • 1 onion, diced
  • 1 bell pepper, diced
  • 4 tortillas, cut into strips

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, brown the ground turkey with the onion and bell pepper over medium heat.
  3. Stir in the taco seasoning, black beans, corn, and salsa. Cook for another 5 minutes.
  4. In a baking dish, layer half of the tortilla strips at the bottom.
  5. Spread half of the turkey mixture over the tortillas, followed by half of the cheese.
  6. Repeat the layers, finishing with cheese on top.
  7. Bake in the preheated oven for 25 minutes or until cheese is bubbly and golden.

Notes

  • For a spicier version, add diced jalapenos.
  • This dish can be made ahead of time and reheated.
