  • 1/2 cup chopped walnuts
  • 1/2 cup raisins
  • 1 cup whole wheat flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 1/4 cup apple sauce
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together all the dry ingredients.
  3. In another bowl, whisk together the wet ingredients until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Fold in the carrots, pineapple, walnuts, and raisins.
  6. Scoop the batter into the prepared muffin tin, filling each cup about three-quarters full.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
