  • 1 pound chicken thighs, boneless and skinless
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 cups broccoli florets
  • 2 cups cooked brown rice

Instructions

  1. In a bowl, whisk together honey, soy sauce, rice vinegar, garlic, and ginger.
  2. Place chicken thighs in a skillet over medium heat and pour the sauce over them.
  3. Cook for about 6-7 minutes, flipping halfway, until chicken is cooked through.
  4. Remove chicken and chop into bite-sized pieces.
  5. Add broccoli to the skillet and steam for about 3-4 minutes.
  6. To serve, create bowls with brown rice, topped with chicken and broccoli, and drizzle with additional sauce.
