Healthy Tomato Zucchini Pasta (One Pan!)

A delicious and healthy pasta dish that combines fresh tomatoes and zucchini, made easily in one pan.

Ingredients

  • 8 ounces whole grain pasta
  • 2 cups zucchini, sliced
  • 2 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh basil, chopped

Instructions

  1. In a large pan, heat olive oil over medium heat.
  2. Add garlic and sauté for 1 minute.
  3. Add zucchini and cherry tomatoes; cook until tender.
  4. Stir in cooked pasta, oregano, salt, and pepper.
  5. Mix in fresh basil before serving.
