- 4 large potatoes, peeled and diced
- 1 cup shredded cheddar cheese
- 1/2 cup turkey bacon, cooked and crumbled
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tablespoon fresh thyme
- 1 tablespoon fresh parsley, chopped
- salt and pepper to taste
- In a large pot, cook the turkey bacon until crispy. Remove and set aside.
- Add the chopped onion and garlic to the pot and sauté until softened.
- Add the diced potatoes and chicken broth, bringing to a simmer.
- Cook until the potatoes are tender, about 20 minutes.
- Stir in the heavy cream, cheddar cheese, thyme, and parsley.
- Season with salt and pepper. Simmer for an additional 5 minutes.
- Serve hot, garnished with turkey bacon.
Notes
- For a vegetarian version, omit the turkey bacon.
- Adjust the thickness by adding more or less broth.
