Hearty Dairy-Free Chicken Dumpling Soup

A rich and flavorful chicken dumpling soup that is completely dairy-free, perfect for warm comfort.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, diced
  • 4 cups vegetable broth
  • 2 cups shredded cooked chicken
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups dairy-free dumplings
  • 2 cups fresh spinach

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and garlic, sauté until fragrant.
  3. Add carrots and celery, cook until tender.
  4. Pour in the vegetable broth, and bring to a boil.
  5. Stir in the cooked chicken, thyme, salt, and pepper.
  6. Add the dumplings to the boiling soup and cook until they rise to the top.
  7. Stir in the fresh spinach and cook for an additional minute.
  8. Remove from heat and serve warm.

Notes

  • For a thicker soup, you can blend a portion of it and then mix it back in.
  • Feel free to add other vegetables based on your preference.
