- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 cups vegetable broth
- 2 cups diced chicken or chickpeas for a vegetarian option
- 2 cups mixed vegetables (carrots, peas, corn)
- 1 cup non-dairy milk
- 1 teaspoon thyme
- 1 teaspoon parsley
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups dumpling dough (store-bought or homemade)
- In a large pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until onion is translucent.
