Hearty Dairy-Free Chicken Dumpling Soup

A warm and comforting soup perfect for chilly days, made without any dairy.

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 cups vegetable broth
  • 2 cups diced chicken or chickpeas for a vegetarian option
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 cup non-dairy milk
  • 1 teaspoon thyme
  • 1 teaspoon parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups dumpling dough (store-bought or homemade)

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion and garlic, sauté until onion is translucent.
  3. Pour in vegetable broth and bring to a boil.
  4. Add chicken or chickpeas, mixed vegetables, thyme, parsley, salt, and pepper.
  5. Once boiling, drop spoonfuls of dumpling dough into the soup.
  6. Reduce heat and let simmer until dumplings are cooked through, about 15 minutes.
  7. Stir in non-dairy milk before serving.

Notes

  • This soup can be made ahead of time and freezes well without the dumplings.
  • For extra flavor, add a splash of lemon juice before serving.
