  • 4 pieces chicken thighs
  • 2 cups sliced mushrooms
  • 1 cup onion, chopped
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup white wine
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon Dijon mustard
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the onion, garlic, and mushrooms; sauté until soft.
  3. Add the chicken thighs and sear until golden brown on both sides.
  4. Stir in the white wine, scraping up any browned bits from the bottom of the skillet.
  5. Mix in the heavy cream, Dijon mustard, and thyme. Season with salt and pepper.
  6. Transfer everything to a casserole dish and cover with foil.
  7. Bake for 45 minutes, then remove the foil and bake for an additional 15 minutes until the sauce is bubbling.
