Hearty Vegan Stew (One-Pot Recipe)

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 bell pepper, chopped
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 cups kale, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the onion and garlic, sauté until softened.
  3. Add carrots, celery, and bell pepper; cook until they start to soften.
  4. Stir in the diced tomatoes, vegetable broth, chickpeas, kale, thyme, cumin, and smoked paprika.
  5. Bring to a boil, then reduce heat and let simmer for 30 minutes.
  6. Season with salt and pepper to taste before serving.

Notes

  • For a richer flavor, add a splash of balsamic vinegar.
  • Feel free to use any vegetables you have on hand.
