Herb Roasted Chicken with Warm Olives and Citrus

A delicious combination of herb roasted chicken served with warm olives and a refreshing citrus twist.

Ingredients

  • 1 whole chicken
  • 4 tablespoons olive oil
  • 2 teaspoons fresh rosemary, chopped
  • 2 teaspoons fresh thyme, chopped
  • 1 lemon, zested and juiced
  • 1 orange, zested and juiced
  • 1 cup mixed olives
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, rosemary, thyme, lemon zest, orange zest, salt, and pepper.
  3. Rub the mixture all over the chicken, including under the skin.
  4. Place the chicken in a roasting pan and roast for 1 hour, or until the internal temperature reaches 165°F (75°C).
  5. In the last 15 minutes of cooking, add the olives to the pan.
  6. Remove the chicken from the oven and let it rest for 10 minutes before carving.
  7. Serve the chicken with warm olives and citrus juices drizzled on top.

Notes

  • For added flavor, marinate the chicken overnight.
  • Serve with a side of roasted vegetables for a complete meal.
