Homemade Beef Enchiladas with Red Sauce

  • 1 cup onion, chopped
  • 2 cups red enchilada sauce
  • 10 corn tortillas
  • 2 cups shredded cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground beef and onion over medium heat until the beef is browned.
  3. Add garlic powder, cumin, salt, and pepper to the meat mixture and stir well.
  4. Warm the tortillas in a dry pan to make them pliable.
  5. Spoon some of the beef mixture onto each tortilla, roll them up, and place them seam side down in a baking dish.
  6. Pour the red enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.
  7. Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
  8. Let cool slightly before serving.

  • For extra flavor, add diced green chilies to the beef mixture.
