  • 4 ounces crispy turkey bacon
  • 1 cup grated Parmesan cheese
  • 3 large eggs
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt to taste

Instructions

  1. Start by spiralizing the zucchinis into noodles.
  2. In a large skillet, cook the turkey bacon until crispy, then set aside on paper towels.
  3. In the same skillet, sauté the minced garlic in olive oil until fragrant.
  4. Add the zucchini noodles to the skillet and cook for about 3–4 minutes until slightly tender.
  5. In a bowl, whisk together the eggs, grated Parmesan cheese, salt, and pepper.
  6. Remove the skillet from heat, then pour the egg mixture over the zucchini noodles, stirring quickly to prevent the eggs from scrambling.
  7. Top with crispy turkey bacon and additional Parmesan cheese before serving.
