Ingredients

  • 2 pounds Yukon Gold potatoes
  • 1 bulb garlic
  • 1 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 4 tablespoons butter
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wrap the garlic bulb in foil and roast for 30-35 minutes.
  3. Peel and chop the potatoes, then boil them in salted water until tender, about 20 minutes.
  4. Drain potatoes and return to pot.
  5. Squeeze roasted garlic from the bulb into the potatoes.
  6. Add mascarpone, heavy cream, and butter; mash until smooth.
  7. Season with salt and pepper to taste.
  8. Serve warm.

Notes

  • For a richer flavor, use more butter.
