Irresistible Short Rib Ragu: A Comfort Food Delight

  • 3 pounds short ribs
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 2 cups red wine
  • 1 can (28 ounces) crushed tomatoes
  • 2 cups beef broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large pan, heat olive oil over medium-high heat. Add the short ribs and brown on all sides.
  3. Remove the short ribs and add onion, carrots, celery, and garlic to the pan. Sauté until soft.
  4. Pour in the red wine, scrape the bottom of the pan to deglaze, and reduce by half.
  5. Add the crushed tomatoes, beef broth, thyme, bay leaf, short ribs, salt, and pepper. Stir to combine.
  6. Cover with a lid and transfer to the oven. Cook for 2 to 3 hours until the meat is tender.
  7. Remove the short ribs, shred the meat, and return it to the sauce. Serve with pasta or polenta.

Notes

  • For an extra depth of flavor, let the ragu sit overnight in the refrigerator.
  • Serve with freshly grated Parmesan cheese on top.
