1 pound ground chicken
1/4 cup breadcrumbs
2 tablespoons cilantro, chopped
1 egg
2 cloves garlic, minced
1 teaspoon ginger, grated
1 teaspoon fish sauce
1/2 teaspoon salt
1/4 teaspoon pepper
1 can coconut milk
2 tablespoons red curry paste
1 tablespoon lime juice
for garnish cilantro leaves
Instructions
In a mixing bowl, combine ground chicken, breadcrumbs, cilantro, egg, garlic, ginger, fish sauce, salt, and pepper. Mix well.
Form the mixture into small meatballs.
In a pan, heat some oil over medium heat and cook the meatballs until browned and cooked through.
In a separate pot, combine coconut milk and red curry paste. Stir well and bring to a simmer.
Add the cooked meatballs to the curry sauce and let it simmer for 10 minutes.
Finish with lime juice and garnish with cilantro leaves before serving.
Notes
Adjust the level of spice by adding more or less red curry paste.
