  • 1 pound ground chicken
  • 1/4 cup breadcrumbs
  • 2 tablespoons cilantro, chopped
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon fish sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon lime juice
  • for garnish cilantro leaves

Instructions

  1. In a mixing bowl, combine ground chicken, breadcrumbs, cilantro, egg, garlic, ginger, fish sauce, salt, and pepper. Mix well.
  2. Form the mixture into small meatballs.
  3. In a pan, heat some oil over medium heat and cook the meatballs until browned and cooked through.
  4. In a separate pot, combine coconut milk and red curry paste. Stir well and bring to a simmer.
  5. Add the cooked meatballs to the curry sauce and let it simmer for 10 minutes.
  6. Finish with lime juice and garnish with cilantro leaves before serving.

Notes

  • Adjust the level of spice by adding more or less red curry paste.
  • Serve with jasmine rice for a complete meal.
