  • 2 pounds chicken thighs
  • 2 tablespoons jerk seasoning
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 bell pepper, diced
  • 1 cup frozen peas
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Marinate the chicken thighs with jerk seasoning and let it sit for at least 30 minutes.
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
  3. Add the marinated chicken and cook until browned on all sides.
  4. Stir in the rice, chicken broth, and bell pepper. Bring to a boil.
  5. Reduce heat, cover, and simmer for 20 minutes.
  6. Add the peas and cilantro, stir well, and serve.

Notes

  • For extra heat, add more jerk seasoning to taste.
