A delicious twist on classic eggs benedict, featuring turkey bacon and a creamy sauce.

  • 8 large eggs
  • 2 cups milk
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped fresh chives
  • 3 cups diced bread
  • 1 cup cooked turkey bacon, chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs, milk, Dijon mustard, salt, and pepper.
  3. Add the chopped chives, diced bread, and turkey bacon to the egg mixture and stir until well combined.
  4. Pour the mixture into a greased baking dish.
  5. Bake for 30-40 minutes, or until the casserole is set and golden brown on top.
  6. Let cool for a few minutes before serving.

Notes

  • For a vegetarian option, omit the turkey bacon and add more vegetables.
  • This casserole can be prepared the night before and baked in the morning.
