Layered Reuben Casserole Bake Cheesy Deli Style Dinner

A delicious and cheesy layered Reuben casserole that combines all the classic flavors of a Reuben sandwich in a hearty, comforting bake.

  • 1 pound corned beef, chopped
  • 8 ounces Swiss cheese, shredded
  • 1 loaf rye bread, cubed
  • 1 cup sauerkraut, drained
  • 1 cup Thousand Island dressing
  • 1 cup sour cream
  • ½ cup milk
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the chopped corned beef, sauerkraut, and half of the Swiss cheese.
  3. In another bowl, whisk together the Thousand Island dressing, sour cream, milk, and eggs.
  4. Layer half of the rye bread in a greased baking dish, followed by the meat mixture, and then the dressing mixture. Repeat layers, ending with the remaining Swiss cheese on top.
  5. Bake for 45-50 minutes until golden and bubbly.

Notes

  • For extra flavor, consider adding pickles or jalapeños.
  • Serve with additional Thousand Island dressing for drizzling.
