  • 1 pound chicken breast, diced
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • 1 bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook the pasta according to package instructions.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add garlic and diced chicken, cooking until the chicken is fully cooked.
  4. Add bell pepper and cherry tomatoes, sauté for about 3-4 minutes.
  5. Stir in the spinach and cook until wilted.
  6. Toss in the cooked pasta, lemon juice, salt, pepper, and red pepper flakes.
  7. Mix well and serve topped with Parmesan cheese.

Notes

  • For a vegetarian option, replace chicken with tofu.
