Lemon Garlic Chicken and Zoodles

A delicious and healthy Lemon Garlic Chicken paired with zoodles for a guilt-free meal.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 medium zucchinis, spiralized
  • 3 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a large bowl, mix the olive oil, lemon juice, garlic, salt, and pepper.
  2. Add the chicken breasts to the bowl and marinate for at least 30 minutes.
  3. Heat a skillet over medium heat and cook the chicken for about 5-7 minutes on each side or until fully cooked.
  4. In the same skillet, add the spiralized zucchini and sauté for 3-4 minutes until tender.
  5. Serve the chicken on top of the zoodles, garnished with fresh parsley.

Notes

  • For added flavor, consider adding red pepper flakes to the marinade.
  • Make sure to not overcook the zoodles to keep them crunchy.
