  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 large lemons, zested and juiced
  • 1/2 cup lemon curd

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a mixing bowl, combine oats, flour, brown sugar, granulated sugar, butter, salt, and baking powder until crumbly.
  3. Press half of the mixture into the bottom of the prepared pan.
  4. Spread the lemon curd over the crust evenly.
  5. Mix lemon juice and zest into the remaining crumb mixture and sprinkle it over the lemon curd.
  6. Bake for 30-35 minutes or until golden brown.
  7. Let cool before slicing into bars.

Notes

  • For a richer flavor, replace half of the butter with coconut oil.
