Lentil Potato Soup with Homemade Croutons

Delicious lentil potato soup served with crispy homemade croutons.

Ingredients

  • 1 cup lentils
  • 2 large potatoes
  • 1 onion
  • 3 cloves garlic
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste
  • 3 slices bread
  • 1 teaspoon parsley

Instructions

  1. Rinse the lentils and set aside.
  2. Dice the potatoes and onion, and mince the garlic.
  3. In a pot, heat olive oil over medium heat and add onion and garlic. Sauté until fragrant.
  4. Add diced potatoes, lentils, vegetable broth, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for about 25 minutes until lentils and potatoes are tender.
  6. While the soup simmers, make the croutons. Cube the bread and toss with olive oil and parsley.
  7. Bake at 375°F for about 10 minutes, until golden and crisp.
  8. Serve the soup hot with croutons on top.

  • Feel free to add your favorite spices.
  • Make it vegan by ensuring vegetable broth is used.
