  • 2 large potatoes, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • 4 slices bread for croutons
  • 1 tablespoon butter

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
  2. Add lentils, potatoes, vegetable broth, cumin, thyme, salt, and pepper. Bring to a boil.
  3. Reduce heat and simmer for 30 minutes until lentils and potatoes are tender.
  4. While soup is cooking, prepare croutons: Preheat oven to 400°F (200°C).
  5. Spread butter on bread and cut into cubes. Place on a baking sheet and bake until golden brown, about 10 minutes.
  6. Serve soup hot, topped with homemade croutons.
