- 2 large potatoes, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 teaspoon thyme
- 4 slices bread for croutons
- 1 tablespoon butter
- In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
