  • 1 cup green or brown lentils
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 6 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 2 cups spinach or kale, chopped

Instructions

  1. Rinse lentils under cold water and set aside.
  2. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Sauté until softened.
  3. Add garlic and spices, sauté for an additional minute.
  4. Stir in lentils, broth, tomatoes, salt, pepper, and cayenne.
  5. Bring to a boil, then reduce heat and let simmer for 25-30 minutes until lentils are tender.
  6. Add the spinach or kale in the last few minutes of cooking.
