- 1 cup green or brown lentils
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 6 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 2 cups spinach or kale, chopped
- Rinse lentils under cold water and set aside.
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Sauté until softened.
- Add garlic and spices, sauté for an additional minute.
- Stir in lentils, broth, tomatoes, salt, pepper, and cayenne.
- Bring to a boil, then reduce heat and let simmer for 25-30 minutes until lentils are tender.
- Add the spinach or kale in the last few minutes of cooking.
