  • 4 cups diced potatoes
  • 6 slices turkey bacon
  • 4 ounces chicken ham, diced
  • 1 bell pepper, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 large eggs
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon paprika

Instructions

  1. Cook the turkey bacon in a large skillet over medium heat until crispy. Remove and crumble.
  2. In the same skillet, add olive oil and diced potatoes. Cook until golden and tender.
  3. Add bell pepper, onion, and garlic. Sauté until vegetables are soft.
  4. Stir in chicken ham and crumbled turkey bacon.
  5. Make wells in the hash and crack an egg into each well. Cover and cook until eggs are set.
  6. Season with salt, pepper, and paprika. Serve hot.
