Loaded Veggie Baked Ziti

  • 12 ounces ziti pasta
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 cup spinach, chopped
  • 1 can (15 ounces) ricotta cheese
  • 2 cups marinara sauce
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the ziti pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant.
  4. Add bell pepper and spinach, cooking until vegetables are tender.
  5. In a large bowl, combine cooked ziti, sautéed vegetables, ricotta cheese, and marinara sauce. Mix well.
  6. Transfer the mixture to a baking dish. Top with mozzarella and Parmesan cheese.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
